Holy chocolate frijoles this cake is good!

Last summer we were sitting in a park with a couple of friends talking about where the best croissants and brownies are to be found, as you do. When the suggestion of black bean brownies came up. It was something I had tested before when I was going through  a making brownies out of unusual ingredients phase, some of which included avocado brownies, beet root brownies and of course black bean brownies.

So last week when hosting a little dinner party for friends I decided to give it another go but in the form of a cake. And here I am sharing it with you.

I actually thought this recipe might turn out a little dry, so I bought some ice cream just in case. But it really didn’t, it was dense and rich and tasted nothing like black beans.

This is delicious, plus it’s packed with protein form those beans.

Ingredients

*1 can black beans (drained and rinsed well) *2 tbsp cocoa powder *1 egg (optional) you can just leave it out if you want to make it vegan *1 egg (optional) *1 cup of almond meal *Pinch of salt *1/3 cup pure maple syrup, honey, or raw cane sugar more if you like it sweeter *1/4 cup coconut melted *2 tsp cinnamon *1/2 tsp baking powder *100g of 72% chocolate melt half of it and chop the other half into chunks to mix in.

Method

*Drain, rinse well and then blend the black beans until smooth.

*Mix together the egg (if you want), sugar/maple syrup and coconut oil. It still holds together without the egg but is a tiny bit more crumbly but if you store it in the fridge it gets nice and firm.

*Add the beans to the egg, sugar and oil mix.

*Melt half the chocolate over a water bath or in the microwave on low be careful not to burn it. There is nothing more tragic then burnt chocolate. Stir the melted chocolate into the mix.

*With a wooden spoon fold in the cacao powder, almond meal, salt, cinnamon and baking powder and the rest of the chunks of chocolate.

*Top with pistachio’s

*Prepare a cake dish by greasing it with coconut oil. Pour the mix into the dish.

*Bake on 180* for 30-35 mins.

Let it cool for 20minutes and then enjoy!
